Vegan wedding cake!

 Hi Folks,

I know...it has been a very long time again. Honestly, I have been really busy. Working, moving, traveling, baking, and everything else.

A few months ago, my  friend Jodi informed me that she needed a vegan cake for her upcoming wedding. So, being the adventurous (and ridiculous) person that I am, I volunteered. Hence, the wedding cake below. Not bad for a first, eh? I didn't realize quite how much time it would actually take. I practiced different recipes for months and finally settled on an egg replacement concoction that lived up to my expectations. The night  before the wedding Christin and Caroline came over to help with the baking festivities. LOL. We put the first cake in the oven at around 11:30 pm and finished the last one at around 3:30 am. A word of counsel to the wise: don't wait until the night before to make the wedding cake.

This one shows the lemon/raspberry layers. :) mmmm....

Ooo, wow! Great job, Innylay! Looks yummy. I'm sure it was delicious... seeing as our cake was lemon/raspberry layers as well.

Yeah, the lady who made my cake made it during the week before the wedding, and froze it after she layered it and frosted it. She took it out of the freezer the morning of the wedding and frosted and decorated then. It was quite the ordeal. She made the cakes at someone's house across town from us and two or three times a day we'd drive over there and pick up a new cake to take to my parents' house and freeze (since we had several sheet cakes made to feed the crowd, in addition to the cake out in the reception area).

Wow, you did an incredible job!  Very elegant.  Sounds like the wedding went something like my recent graduation, though our cake wasn't quite so beautiful, yet it was finished earlier.  Man it's rough being up that late at night trying to get the final things pulled together!  It's a huge help to those who are enjoying their special day, though.  Once again, well done!!  I'll remember who to contact when my sweetie and I join lives

I have to agree with the very handsome young man who said you are awesome. He has incredible taste in cakes and a certain young lady that I know! By the way, you do know that this is Jodi writing this note don't you? I just had to let you know how much I appreciate the time,energy, and your willingness to bake such a wonderful cake!!! My husband enjoyed it very much and said over and over again that it was his favorite. So, do you think you'd be willing to share the recipe with me? Thanks again.
